The making of wines falls into two parts: the growing of the grapes, or viticulture, and the turning of grapes into wine, vinification. In touring the winemaking process, one must begin with the rootstock and vine. We are only going to concern ourselves with one species of grape vine, the vitus vinifera, which literally translates into “wine vine.” More than 99 percent of all wines consumed are made from this species.
